This is such a small and silly thing, but if you cut all the way through the floret it will leave little broccoli bits all over the place. If you just cut the stem, then (gently) tear it the rest of the way, it will separate the floret into neat parts with all the little bits still attached! No more scrubbing them off the chopping board into the bin or smearing them into the counter trying to wipe them away.
